Ash gourd curry|Kootu is an easy curry which can be made at any time.There are different styles of recipe available. Here we have given 2 styles. follow the below step by step process to easily cook ash gourd curry.
Ash gourd curry|Kootu Style 1
Ingredients
Ash gourd chopped 1 cup
Bengal gram dhal 1/4 cup
Coconut 1/4 cup
Green chilli 3
Salt as per taste
Oil 2 spoon
Rice flour 1/2 spoon
Mustard seeds 1/4 spoon
Asafoetida 3 pinches
Black gram dhal 1/4 spoon
Method
Soak bengal gram dhal for 1/2 an hour and boil the same with ash gourd.
Grind coconut, rice flour and green chilli. Heat a kadai, pour oil and add mustard seeds, asafoetida and black gram dhal.
Add the cooked veggies, grinded paste and salt with little water.
Boil for few minutes and once we get required consistency remove from flame and serve with rice.
Note
Can garnish with curry leaves.
Ash gourd curry|Kootu Style 2
Ingredients
Ash gourd 1 cup chopped
Pasiparuppu 1/4 cup
Coconut 3 tablespoon
Redchilli 3
Bengal gram dhal 2 spoon
Coriander seeds 1 spoon
Black gram dhal 1 spoon
Asafoetida 1/4 spoon
Mustard seeds 1/4 spoon
Black gram dhal 1 spoon
Curry leaves
Turmeric less than 1/4 spoon
Oil 2 spoon
Salt as per taste
Method
Take a cooker and add ash gourd and Pasiparuppu with sufficient water and give 4 to 5 whistle and keep aside.
Heat a kadai pour 1 spoon of oil and add bengal gram dhal, black gram dhal, coriander seeds and red chilli, fry till it becomes golden brown.
Allow it to cool and grind the same with coconut into a fine paste.
Now pour the rest 1 spoon of oil in a kadai add mustard seeds, asafoetida, black gram dhal and curry leaves.
Now add the cooked veggies, turmeric, salt and the grinded paste with little water and mix well. Allow it to boil for 2 to 3 minutes and turn off the stove and serve with rice or roti.
