How to prepare purple Carrot Poriyal? Recipe by Anuradha Ramaswamy
Carrot Poriyal is one of the famous South Indian dish used as side dish for Rice. Most of the poriyals are made with vegetables. It’s tasty and very simple recipe that’s very delicious. Its super packed with nutrition and good for health.
In this carrot poriyal recipe, initially the carrots are chopped and sautéed with a few spices. Below is the step by step process to make simple Carrot poriyal
Coconut 3 tablespoon
Turmeric 1/4 spoon
Asafoetida few pinches
Mustard seeds 1/4 spoon
Black gram dhal 1/2 spoon
Oil 2 spoon
Chop carrot, take a kadai pour oil add mustard seeds, asafoetida, black gram dhal and red chilli. Now add carrot, turmeric and sprinkle water cover and cook, keep stirring in between. Once it cooked 3/4th add salt and mix well. Cook till it gets cooked, finally add coconut and serve with rice or roti.
Instead of carrot, can use french beans, peas, snow peas etc separately to get different taste
