Ivy gourd fry – Ivy is also called as kovaikai in Tamil. Ivy gourd fry or kovaikai fry is one of the delicious south Indian recipes served as a Side Dish for daily food. This vegetable has some health benefits also.
Some health benefits are :-
- Facilitates easy bowl movements
- Control blood sugar level
- Improves Digestions
- Prevents constipation.
- Control blood pressure and reduce heart disease.
Ingredients
Ivy gourd 1/2 kgs
Mustard seeds 1/2 spoon
Bengal gram dhal(Kadalai Paruppu) 1 spoon
Asafoetida 1/4 spoon
Curry powder 4 spoon
Curry leaves 1 string
Salt and oil as required
Method
Wash and remove the tip of the ivy gourd and cut into small pieces (cut length wise).
Take a kadai pour 2 tablespoon of oil and add mustard seeds, asafoetida, bengal gram dhal and curry leaves.
Now add the chopped ivy gourd,mix it and cook.
Cook in low flame till it becomes tender.
Now add salt mix well and again cook for 5 minutes. Add curry powder before removing from fire.
Serve it as a Side Dish.
Note :-
If you want to make with other vegetable instead of Ivy
Do the same procedure above
You Can add ladies finger or brinjal. Chop the veggies and saute for few minutes.
Your fry is now ready to serve!!!
